Winter is among us and with it comes the familiar craving for warm, heavier types of foods– rich stews and decadent desserts. The sweet potato, or more often found in these parts: the yam, comes to the rescue to satisfy these cravings and provides us with a way to cash in on nutrient-dense calories.
Dr. Wilcox (author of The Okinawa Diet) says sweet potatoes are one reason Okinawans have such young, healthy cardiovascular systems. Rich in complex carbohydrates, dietary fiber, beta carotene, vitamin C and vitamin B6, these tubulars are a high mileage food. And despite the name “sweet”, it may be a beneficial food for diabetics, as preliminary studies on animals have revealed that it helps to stabilize blood sugar levels and to lower insulin resistance.
